Dreaming of Buying a Pizza Oven?
Buy a Stone First.
At some point, everyone who falls in love with pizza starts looking at ovens.
Wood-fired. Gas. Portable. Flames licking the ceiling. Leopard spotting. Dramatic launches. Friends sharing pizza.
It’s extremely exciting.
But before you spend hundreds — sometimes thousands — on a pizza oven, spend about £30 on a pizza stone.
I honestly think a stone is the real first step into the world of pizza-making. Not because it’s cheaper than a fancy oven — but because it teaches you what actually matters.
The Real Problem Isn’t Your Oven
Most domestic ovens reach 250–275°C. Not what a domed, wood-fired Neapolitan oven gives you — but here’s the thing: temperature isn’t the main issue.
The real problem in home pizza is heat transfer.
Pizza needs intense, immediate bottom heat. If the base doesn’t receive that shock, you get pale crust, dense crumb, and a dry top before the structure sets.
A properly preheated pizza stone stores heat and releases it quickly. That conductive heat from below is what crisps the base and sets the structure early.
It isn’t the flame that makes the difference first. It’s the floor.
Why This Matters More Than Temperature
Higher temperature doesn’t fix poor fermentation. In fact, it exposes it faster.
Most people assume they’ll learn to make great pizza once they own a pizza oven. But it’s usually the other way around. A pizza oven refines skill — it doesn’t create it.
Buying one too early is a bit like signing up for a marathon when you’ve just started running. The marathon won’t teach you how to pace, breathe, or build endurance. It will simply expose what you haven’t trained yet.
A hotter oven works the same way. If your dough lacks strength, if your fermentation isn’t balanced, if your shaping is inconsistent — higher heat won’t fix it. It will just make the weaknesses show up faster.
And to be clear: if you already know how to ferment, shape, and manage heat properly, a pizza oven is wonderful. It makes everything faster and more expressive.
What You Can Realistically Expect (as temperature increases)
Here’s the part that gets missed: you can achieve a lot in a domestic oven with a properly heated stone. Extra temperature brings speed and drama — but the biggest leap is still the stone.

Domestic oven, no stone
(250–275°C, tray or thin sheet)
Often a pale underside, longer bake times and a drier crumb. You can still make enjoyable pizza, but the base is the limiter.

Domestic oven + properly preheated stone
(250–275°C, stone heated 45–60 minutes)
This is the big jump: better oven spring, a crisper base, and a faster bake (often ~6–8 minutes). You won’t get dramatic top char, but you can absolutely get a serious pizza.

High-heat countertop oven (e.g., Ninja / electric pizza ovens)
(often ~350–430°C, depending on model)
Faster bakes and more top colour. You’ll start seeing more blistering and a lighter feel — but only if the dough is already well fermented. This is refinement: speed, consistency, and nicer top heat.

Outdoor pizza oven (e.g., Ooni)
(typically ~400–500°C+ when properly preheated)
The full “pizza oven” experience: very fast bakes (often 60–120 seconds), more dramatic blistering and spotting, and better moisture retention — when your dough is right. If your dough is wrong, it just fails faster.
Think of temperature as an amplifier, not a rescue. It amplifies great dough — and it amplifies mistakes.
A Simple Test
Preheat your oven for at least 45 minutes with the stone inside. Use the top third of the oven. Bake one pizza.
If the base browns properly and the crumb opens, you’re closer than you think.
But if your pizza is dense and bread-like, the solution isn’t necessarily a bigger oven. It’s better fermentation.
When Is It Time for an Oven?
Once you can consistently produce light structure, proper browning underneath, balanced fermentation, and good extensibility — then a pizza oven becomes an upgrade. Until then, don’t treat a hotter oven like a rescue mission.
And that’s a very different purchase.

A stone is enough to teach you that. And once you understand it properly, you’ll know exactly when you’re ready for more.
